Ingredients

¾ cup sugar

3 tablespoons cornstarch

¾ cup water

¼ cup strawberry gelatin powder

8 oz. cream cheese, softened

¼ cup powdered sugar

2 teaspoons milk

1 teaspoon vanilla extract

Graham cracker pie crust, unbaked

3 cups fresh strawberries, sliced

Whipped cream, for serving

Directions

  1. In a small saucepan, combine the sugar, cornstarch, and water. Whisk together until completely smooth with no lumps. Place over medium heat and bring to a boil, stirring frequently. Once boiling, continue to stir and cook for 2 minutes until the mixture thickens and becomes translucent. Remove from heat.

  2. Add the strawberry gelatin powder to the hot mixture and stir thoroughly until the gelatin is completely dissolved. Allow the mixture to cool to room temperature, then transfer to the refrigerator and chill until it reaches a syrupy consistency (about 45 minutes).

  3. While the gelatin mixture chills, combine the softened cream cheese, powdered sugar, milk, and vanilla extract in a small bowl. Beat with an electric mixer or whisk until smooth and creamy.

  4. Spread the cream cheese mixture evenly over the bottom of the graham cracker pie crust in an even layer.

  5. Arrange the sliced fresh strawberries in a single layer over the cream cheese mixture.

  6. Carefully spoon the thickened strawberry gelatin mixture over the strawberries, coating them evenly.

  7. Refrigerate the pie until the gelatin is completely set, about 1 hour.

  8. Before serving, top each slice with a dollop of whipped cream. Store covered in the refrigerator for up to 2 days.
