4 slices turkey bacon, chopped

1/2 cup onion, diced

2 cups frozen black-eyed peas

2 cups water

1 tablespoon sugar

1/4 teaspoon black pepper

Directions

  1. Wash your hands with soap and warm water before beginning. Chop the turkey bacon into bite-sized pieces and dice the onion.

  2. Heat a large pot or deep skillet over medium-high heat. Add the chopped turkey bacon and cook until the edges begin to brown and the fat renders, about 2 minutes.

  3. Add the diced onion to the pot with the bacon and continue cooking, stirring occasionally, until the onion becomes soft and slightly translucent, about 2 to 3 minutes.

  4. Stir in the frozen black-eyed peas, water, sugar, and black pepper. Increase the heat and bring the mixture to a rolling boil.
