Ingredients

1.5 cups quinoa, rinsed

3 cups chicken broth or water

4 chicken thighs, skin-on

1 large onion, sliced

2 tablespoons olive oil

Directions

  1. Heat olive oil in a large skillet or pot over medium-high heat. Season the chicken thighs with salt and pepper, then brown them skin-side down for 4–5 minutes until golden. Flip and brown the other side for another 3–4 minutes. Transfer the chicken to a plate and set aside.

  2. In the same pot, add the sliced onion to the remaining oil and cook for 3–4 minutes, stirring occasionally, until softened and lightly caramelized.

  3. Add the rinsed quinoa to the pot and stir for 1–2 minutes to lightly toast it.

  4. Pour in the broth or water, stirring gently. Return the browned chicken thighs to the pot, nestling them into the quinoa. Bring the liquid to a simmer.

  5. Reduce heat to medium-low, cover the pot, and simmer for 20–25 minutes until the quinoa is tender, the liquid is absorbed, and the chicken reaches an internal temperature of 165°F (74°C) when measured at the thickest part of the thigh without touching bone.

  6. Remove from heat and let rest for 5 minutes. Fluff the quinoa with a fork, adjust seasoning to taste, and serve the chicken thighs over the quinoa.
