Ingredients

1/2 cup pitted dates (about 16 regular-sized)

3/4 cup natural peanut butter

1 large banana

1/2 cup certified gluten-free quick oats

1/4 cup certified gluten-free oat bran

Directions

  1. Add the pitted dates to a food processor fitted with an S-blade. Pulse the dates until they break down into a thick, paste-like consistency.

  2. Add the natural peanut butter and banana to the food processor with the date paste. Pulse everything together until the mixture is thoroughly combined and smooth.

  3. Add the quick oats and oat bran to the mixture. Pulse several times until just combined—the mixture will be quite sticky. If the mixture is too sticky to handle, place it in the refrigerator for 1 hour until it firms up enough to roll. If needed, wet your hands slightly while rolling to prevent sticking.

  4. Shape the mixture into 20-24 balls, each about 1 inch in diameter. Arrange the balls on a parchment-lined tray and refrigerate for at least 2 hours to allow them to firm up completely. Store in the refrigerator for up to 5 days, or freeze for up to 2 months.
