A delicate, floral syrup made by infusing dried food-grade lavender into a simple sugar syrup. This versatile condiment brings a gentle, aromatic sweetness to beverages, desserts, and baked goods. Its light purple hue and subtle botanical flavor make it a charming addition to afternoon tea, lemonade, or as a cake drizzle.

Ingredients

1 cup granulated sugar

1 cup water

1/2 to 1 teaspoon dried food-grade lavender

Directions

  1. Pour the water into a small saucepan and bring it to a boil over medium-high heat.

  2. Once boiling, add the granulated sugar and stir until completely dissolved, about 2 minutes.

  3. Remove the saucepan from heat and add the dried lavender, using 1/2 teaspoon for a subtle flavor or up to 1 teaspoon for a more pronounced lavender taste.

  4. Allow the syrup to cool and steep for 15 to 30 minutes, letting the lavender fully infuse into the liquid.

  5. Strain the syrup through a fine-mesh sieve into a clean jar, pressing gently to extract all liquid while leaving the spent lavender buds behind.

  6. Let the syrup cool completely to room temperature, then cover and refrigerate. The syrup will keep for up to 2 weeks when stored in a sealed container.
