Ingredients
8 ounces low-fat garlic and herb cream cheese
6 flour tortillas (8 inch)
6 slices low-sodium turkey
3 medium Roma tomatoes, chopped
3 cups baby spinach leaves
Directions
Thoroughly wash your hands with soap and warm water before preparing the appetizers.
Place the flour tortillas on a microwave-safe plate and microwave on HIGH for 10 to 15 seconds until they become soft and pliable for rolling.
Lay each softened tortilla flat and spread approximately 2 tablespoons of the garlic and herb cream cheese evenly across the entire surface of each tortilla.
Layer one slice of turkey on top of the cream cheese, then distribute the chopped Roma tomatoes and baby spinach leaves evenly over the turkey on each tortilla.
Tightly roll each tortilla from one end to the other, tucking in the sides as you roll to contain the filling. Wrap each completed roll in plastic wrap.
Refrigerate the wrapped rolls for 2 to 3 hours to allow the flavors to meld and the rolls to firm up for easier slicing.
Using a sharp knife, carefully cut each chilled roll into eight 1-inch thick slices.
Arrange the pinwheel slices on a serving platter with the cut side facing down to display the attractive spiral pattern.
