1 pound Ground hot sausage
3 cups Biscuit mix
2 cups Shredded cheddar cheese
1 can Condensed nacho cheese soup
¾ cup Milk
Directions
Heat a skillet over medium heat and add the ground sausage. Cook, breaking it into small pieces with a spoon, until browned throughout with no pink remaining (approximately 8-10 minutes). Transfer to a paper towel-lined plate to drain and let cool slightly.
Preheat oven to 375°F. Grease a 14-cup muffin tin or insert paper liners. In a large mixing bowl, combine the biscuit mix, shredded cheddar cheese, and cooled cooked sausage. Stir gently with a fork until the ingredients are evenly distributed.
In a separate bowl, whisk together the nacho cheese soup and milk until smooth and well combined. Pour the soup mixture into the dry ingredients and stir just until all components are moistened and the batter comes together. Do not overmix.
Spoon the batter into prepared muffin cups, filling each about three-quarters full. A large cookie scoop works well for portioning evenly. Bake in the preheated 375°F oven for 18-20 minutes, until the tops are golden brown.
Remove the muffin tin from the oven and allow the muffins to cool in the pan for 5 minutes. Run a plastic knife around the edges of each muffin to loosen them, then turn out onto a cooling rack or serve warm.
