Ingredients

1 cup honey pecan cream cheese spread

25 Triscuit crackers

¼ cup fresh cilantro, chopped

3 teaspoons jalapeño peppers, finely chopped

3 tablespoons fresh lime juice

¼ cup onion, chopped

2 cups fresh raspberries

Directions

  1. Rinse the fresh raspberries and place them in a small bowl. Finely chop the onion, jalapeño peppers, and cilantro.

  2. In a medium bowl, combine the raspberries, chopped onion, jalapeño peppers, and cilantro. Gently stir the mixture and lightly mash some of the raspberries to release their juices and create a chunky salsa texture.

  3. Squeeze the fresh lime juice over the raspberry mixture and stir until evenly combined. Taste and adjust seasonings as desired.

  4. Spread about 2 teaspoons of the honey pecan cream cheese spread onto each Triscuit cracker.

  5. Top each cheese-covered cracker with approximately 1 teaspoon of the raspberry salsa.

  6. Refrigerate the bites until ready to serve. Enjoy chilled.
