Ingredients
1 small apple, diced
1 tablespoon brown sugar
¼ teaspoon ground cinnamon
½ cup cooked wheat berries
¾ cup lowfat plain yogurt or Greek yogurt
2 tablespoons chopped walnuts
Directions
In a serving bowl or glass, combine the diced apple, brown sugar, and ground cinnamon. Toss gently to coat the apple pieces evenly with the sugar and spice mixture.
Add the cooked wheat berries to the bowl and stir to combine with the apple mixture.
Pour the yogurt into the bowl and gently fold it together with the fruit and grain mixture until well distributed.
Top with chopped walnuts and serve immediately while the yogurt is chilled and the texture contrast is at its best.
Comments
Wheat berries are the stumbling block: none of the major Charlotte chains stock them regularly, so budget a stop at Harris Teeter's bulk section or a specialty grocer. The five-minute timer ignores that wheat berries need to be cooked ahead—a 45-minute simmer minimum—making this a "use your Sunday batch" situation, not a weeknight impulse. Everything else hits: apples, brown sugar, cinnamon, yogurt, and walnuts are stocked everywhere and cheap. The payoff is real—nutty texture and genuine depth against the sugar and fruit—but only if you've already done the legwork.
