Bacon-Lovers Fried Rice

Ingredients
8 slices bacon, cut into 1-inch pieces
1 large egg
3 cloves garlic, minced
1/2 medium onion, diced
1/2 cup peas
3 cups cooked day-old rice
1 teaspoon rice vinegar
Fresh cracked black pepper to taste
Directions
Heat a large skillet or wok over medium-high heat. Add the bacon pieces and cook, stirring occasionally, until nearly crisp, about 3 to 5 minutes.
Add the diced onion and minced garlic to the bacon and pan drippings. Stir frequently and cook until the onion becomes soft and translucent, approximately 2 minutes.
Add the day-old rice to the skillet, breaking up any large clumps with a spoon. Stir and toss the rice until it is heated through, about 2 to 3 minutes.
Create a well in the center of the rice. Crack the egg into the well and let it cook for about 30 seconds until it begins to set, then stir and scramble it throughout the rice.
Add the peas and rice vinegar to the rice mixture. Stir continuously for 1 to 2 minutes until the egg is fully cooked and the peas are heated through.
Season the fried rice generously with fresh cracked black pepper to taste. Toss everything together to combine evenly.
Transfer to a serving dish and serve warm immediately.
