Ingredients

1 lb lean ground beef

1 cup frozen mixed vegetables

1 jalapeño pepper, finely diced

1/3 cup tomato paste

1/2 cup water

2 tsp Worcestershire sauce

2 tbsp balsamic vinegar

1 tbsp Swerve brown sugar

1 tsp salt

1/2 tsp black pepper

8 slider rolls

Directions

  1. Heat a large nonstick skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces with a spoon or spatula, until it is browned throughout with no pink remaining, approximately 5–7 minutes. Ensure the internal temperature reaches 160°F.

  2. Carefully drain off any excess rendered fat from the skillet, leaving the browned beef in the pan.

  3. Transfer the cooked ground beef to a 1½-quart slow cooker.

  4. Add the frozen mixed vegetables, diced jalapeño, tomato paste, water, Worcestershire sauce, balsamic vinegar, Swerve brown sugar, salt, and black pepper to the slow cooker. Stir all ingredients until well combined.

  5. Cover the slow cooker and cook on the low setting for 4 hours, or until the flavors are fully developed and the mixture has thickened slightly.

  6. Taste the mixture and adjust seasonings as needed.

  7. Serve the beef and vegetable mixture on the slider rolls, allowing approximately 2 tablespoons of the filling per roll for each slider.
