Ingredients

1 lb. large shrimp, peeled and deveined

2 tbsp. olive oil

1 tsp. kosher salt

1 tsp. cayenne pepper

1 tsp. paprika

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. dried oregano

2 lemons, sliced thinly crosswise

Directions

  1. Preheat your grill to medium-high heat.

  2. In a small bowl, combine the kosher salt, cayenne pepper, paprika, garlic powder, onion powder, and dried oregano. Mix thoroughly with a fork until all ingredients are evenly distributed.

  3. Place the shrimp in a medium bowl and drizzle with olive oil, tossing gently to coat. Sprinkle the Cajun spice mixture over the shrimp and toss until every piece is evenly coated with the seasonings.

  4. If using wooden skewers, soak them in water for at least 20 minutes. Thread the seasoned shrimp and lemon slices alternately onto metal or wooden skewers, leaving a small space between each piece.

  5. Place the skewers on the preheated grill. Cook for 4 to 5 minutes total, turning halfway through. The shrimp will be done when they are opaque and cooked through (145F internal temperature), and the lemon slices will have light char marks.

Shrimp is coastal North Carolina gold and readily available at all major chains including Kroger, Harris Teeter, and Walmart, making this a genuinely local-friendly dish that sidesteps the specialty-ingredient trap. The spice cabinet is built from staples most households stock—cayenne, paprika, garlic powder, oregano—so a weeknight assembly costs barely more than the protein itself. The stated 15 minutes is honest for skewering and grilling, though you'll want to account for thawing shrimp if frozen, which adds 10-15 minutes to real prep. The dish reheats poorly and demands same-night service, which matters for planning, though the minimal components and hands-off grilling make it genuinely low-effort for a family weeknight.
