1/2 tablespoon coconut oil
1/2 red onion, chopped
1 jalapeño, seeded and chopped
1 tablespoon minced garlic
2 roasted red peppers, pureed
1.5 tablespoons tomato sauce
1/2 cup vegetable broth
1 teaspoon dried marjoram
1/2 teaspoon Mrs. Dash Original Seasoning
1 teaspoon chili powder
1/4 teaspoon dried red chili flakes
Fresh cracked black pepper to taste
3/4 pound large shrimp, peeled and deveined
3 pinches fresh parsley, chopped
Directions
Heat coconut oil in a large skillet over medium-high heat. Once shimmering, add chopped red onion and jalapeño, cooking for 2-3 minutes until softened and fragrant.
Add minced garlic to the skillet and stir constantly for 30 seconds until the raw garlic aroma dissipates and becomes fragrant.
Pour the pureed roasted red peppers into the skillet along with the tomato sauce and vegetable broth, stirring to combine.
Season the sauce with dried marjoram, Mrs. Dash seasoning, chili powder, red chili flakes, and black pepper to taste. Stir well to incorporate all seasonings.
Bring the sauce to a gentle simmer and cook for 2-3 minutes to allow the flavors to meld and the sauce to thicken slightly.
Add the peeled and deveined shrimp directly to the simmering sauce, stirring gently to coat all shrimp evenly with the sauce.
Cook the shrimp for 4-5 minutes, stirring occasionally, until they turn opaque and reach an internal temperature of 145°F. The shrimp are done when they curl and no longer appear translucent.
Remove from heat and garnish with fresh chopped parsley. Serve immediately while hot.
