1 avocado, pitted and diced

3/4 cup frozen corn kernels, thawed

1/2 cup grape tomatoes, quartered

1 tablespoon fresh cilantro, finely chopped

2 teaspoons fresh lime juice

1/4 teaspoon salt

Directions

  1. Thoroughly wash your hands with soap and warm water before beginning preparation.

  2. Cut the avocado in half lengthwise, remove the pit, and carefully scoop the flesh into a medium mixing bowl. Cut the avocado into bite-sized cubes while in the bowl.

  3. Add the thawed corn kernels, quartered grape tomatoes, and chopped cilantro to the bowl with the avocado.

  4. Drizzle the lime juice over the mixture and sprinkle with salt.

  5. Gently fold and toss all ingredients together with a rubber spatula until evenly combined, being careful not to crush the avocado pieces.

  6. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to blend and develop.
