2 cups all-purpose flour

½ cup almond meal

1 teaspoon baking powder

½ teaspoon baking soda

2 teaspoons ground ginger

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground cloves

½ teaspoon salt

½ cup unsalted butter, softened

1 cup brown sugar

1 large egg

½ cup honey

¼ cup milk

1 orange zest

1 cup powdered sugar

1 tablespoon melted butter

1 tablespoon dark rum

Directions

  1. Preheat your oven to 350°F (175°C).

  2. Line a 9x13-inch baking pan with parchment paper for easy removal and cleanup.

  3. In a medium mixing bowl, combine the all-purpose flour, almond meal, baking powder, baking soda, ground ginger, ground cinnamon, ground nutmeg, ground cloves, and salt. Whisk together until evenly blended.

  4. In a large mixing bowl, beat the softened unsalted butter and brown sugar together until the mixture becomes light and fluffy, about 2-3 minutes.

  5. Add the large egg to the butter mixture and beat until fully incorporated and smooth.

  6. Stir in the honey, milk, and orange zest into the butter-egg mixture until well combined.

  7. Gradually fold the dry ingredient mixture into the wet ingredients, stirring just until the batter is evenly combined. Do not overmix.

  8. Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

  9. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  10. While the bars are baking, prepare the glaze by whisking together the powdered sugar, melted butter, and dark rum in a small bowl. Add 1 teaspoon of warm water if needed to achieve a pourable consistency.

  11. Remove the baked Lebkuchen from the oven and let it cool in the pan for approximately 10 minutes. Drizzle the rum glaze evenly over the top and spread to create a smooth layer.

  12. Allow the bars to cool completely at room temperature before cutting into squares and serving.
