Ingredients
1/3 cup raw macadamia nuts
2 cloves garlic
2 cups packed fresh basil leaves
3/4 cup extra virgin olive oil
1 tablespoon fresh lemon juice
3 tablespoons finely grated Dubliner cheese
Salt and black pepper to taste
Directions
Add the raw macadamia nuts to a food processor or blender and pulse several times until they are broken down into small, fine pieces with a coarse texture.
Add the garlic cloves and fresh basil leaves to the processor and pulse until all ingredients are evenly combined and the basil is finely chopped throughout the mixture.
Pour in the extra virgin olive oil and lemon juice, then blend on medium speed until the pesto reaches a smooth, creamy consistency with no large chunks remaining.
Transfer the pesto to a bowl and stir in the grated Dubliner cheese. Taste the mixture and add salt and black pepper as needed until the flavors are balanced to your preference. Serve immediately or store in an airtight container.
Comments
Macadamia nuts are a specialty item not stocked routinely at Charlotte-area chains like Harris Teeter, Food Lion, Kroger, or Walmart; you'll need to make an extra stop at ALDI or a specialty grocer, which adds real friction to a weeknight. Dubliner cheese, an Irish aged cheddar, is similarly scarce and typically found only at Harris Teeter's specialty section or specialty shops—budget another hunt or accept a pricier substitution. The pesto itself is fast and uses fresh basil (available spring through fall at all major chains), but the combination of premium nuts and imported cheese pushes the cost per serving well above $3, driven entirely by the nut-and-cheese base rather than yield. The technique is straightforward and keeps well refrigerated for 3–5 days, making it solid for leftovers or meal prep.
