Ingredients

1/2 cup fresh corn, cooked or frozen

1 can (15 ounces) low-sodium black beans, drained and rinsed

1 cup fresh tomatoes, diced

1/2 cup onion, diced

1/2 cup green bell pepper, diced

2 tablespoons fresh lime juice

2 garlic cloves, minced

1/2 cup picante sauce

Directions

  1. Wash your hands thoroughly with soap and clean water before beginning food preparation.

  2. In a large mixing bowl, combine the cooked corn, drained black beans, diced tomatoes, diced onion, diced green bell pepper, minced garlic, lime juice, and picante sauce.

  3. Stir all ingredients together until well combined and evenly distributed throughout the salsa.

  4. Cover the bowl and refrigerate for at least 30 minutes, or until ready to serve, to allow the flavors to meld together.

  5. Just before serving, stir the salsa and check the consistency. If there is excess liquid that has accumulated at the bottom, drain it off gently.

  6. Transfer to a serving bowl and serve with low-fat baked tortilla chips or fresh raw vegetables such as carrot sticks, celery, or bell pepper strips.
