Ingredients

2 pounds Seedless watermelon, rind removed and cut into 1-inch chunks

1 tablespoon Lemon juice

4 strips Lemon zest strips, removed with a vegetable peeler

3 tablespoons Extra-virgin olive oil

¼ cup Fresh mint leaves, roughly chopped

4 ounces Arugula leaves (optional)

to taste Kosher salt

to taste Freshly ground black pepper

4 ounces Feta cheese, crumbled or cut into small pieces

Directions

  1. In a small bowl, whisk together the lemon juice and extra-virgin olive oil until well combined.

  2. In a large serving bowl or on a platter, combine the prepared watermelon chunks with the arugula leaves, if using.

  3. Drizzle the lemon-olive oil dressing over the watermelon and arugula, then toss gently to coat evenly.

  4. Scatter the chopped fresh mint leaves and crumbled feta cheese over the salad.

  5. Top with the lemon zest strips, then season to taste with kosher salt and freshly ground black pepper. Serve immediately.
