2 cups all-purpose flour
2 cups white sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
½ cup butter
1 cup water
½ cup silken tofu
½ cup plain yogurt
¼ cup milk
1 teaspoon almond extract
½ cup butter for frosting
¼ cup milk for frosting
4 cups confectioner's sugar
½ cup toffee bits
½ cup chopped walnuts
Directions
Preheat your oven to 375°F and allow it to heat for about 15 minutes. Prepare a 15×10×1-inch jelly roll pan by coating it lightly with non-stick cooking spray or butter.
In a large saucepan, combine the butter and water over medium-high heat and bring to a rolling boil. Remove from heat immediately.
In a separate large bowl, whisk together the flour, white sugar, baking powder, baking soda, and salt until evenly combined.
Pour the hot butter and water mixture into the dry ingredients and stir to combine. Gently fold in the silken tofu, yogurt, milk, and almond extract, stirring until the batter is completely smooth with no lumps.
Transfer the batter to the prepared jelly roll pan, spreading it evenly to the edges.
Bake in the preheated oven for 18–22 minutes, until a toothpick inserted into the center of the cake comes out clean, indicating it is fully baked through.
Remove the pan from the oven and let the cake cool on a wire rack for approximately 20 minutes while you prepare the frosting.
In a separate large saucepan, combine the butter and milk and bring to a boil over medium-high heat. Remove from heat immediately.
Stir in the confectioner's sugar until fully incorporated and smooth. Add the almond extract, chopped walnuts, and toffee bits, stirring until well combined.
Spread the warm frosting evenly over the partially cooled cake while it is still warm. Allow the cake to cool completely before serving.
