1/4 cup olive oil

1 cup onion, diced

2 garlic cloves, finely chopped

2 cups red bell pepper, diced

2 cups zucchini, diced

2 cups yellow summer squash, diced

3 cups frozen lima beans

3 cups frozen corn kernels

2 teaspoons dried sage

Directions

  1. Wash your hands thoroughly with soap and running water before beginning preparation.

  2. Heat the olive oil in a large, deep skillet over medium-high heat until it shimmers.

  3. Add the diced onion to the hot oil and cook, stirring frequently, until the onion becomes soft and translucent, about 2 minutes.

  4. Stir in the finely chopped garlic, diced red bell pepper, diced zucchini, diced summer squash, frozen lima beans, and frozen corn kernels. Mix everything together to distribute the ingredients evenly.

  5. Continue cooking, stirring occasionally, until all the vegetables are tender, approximately 10 minutes or longer. The zucchini and squash should soften without becoming mushy.

  6. Remove the skillet from heat and stir in the dried sage until well combined. Season with salt and pepper to taste, then serve warm.
