Ingredients

3 lb. boneless beef chuck roast, tied

1/4 cup BBQ rub seasoning

1/2 teaspoon salt

1 (4 oz.) can chopped green chiles

1/2 cup light mayonnaise

3 green onions, chopped

2 tablespoons fresh lime juice

Sandwich rolls, for serving

Lettuce, for serving

Directions

  1. Pat the beef chuck roast dry with paper towels. In a small bowl, mix together the BBQ rub seasoning and salt.

  2. Rub the seasoning mixture all over the beef roast, coating evenly on all sides.

  3. Place the seasoned roast in a slow cooker. Cook on low heat for 5 hours, or until the meat is very tender and easily pulls apart with a fork.

  4. Remove the roast from the slow cooker and shred the beef using two forks, discarding any excess fat or the twine. Reserve 1/2 cup of the cooking liquid.

  5. In a medium bowl, combine the light mayonnaise, chopped green chiles (with their liquid from the can), chopped green onions, and fresh lime juice. Mix until well blended.

  6. Toss the shredded beef with the green chile and lime aioli, adding some of the reserved cooking liquid as needed to reach desired consistency.

  7. Toast the sandwich rolls lightly if desired. Place a portion of the seasoned beef mixture on each roll and top with fresh lettuce.

  8. Serve immediately while the beef is still warm.
