Ingredients
Softened unsalted butter or nonstick cooking spray, for greasing
2 tablespoons fine cornmeal, plus more for dusting
5 large egg whites, separated
3 large egg yolks, separated
1 pound cooked smooth and creamy grits, still warm
3/4 cup grated mild or medium Cheddar cheese
1 tablespoon finely sliced fresh chives
1 teaspoon kosher salt
Directions
Preheat your oven to 375°F. Grease four individual ramekins or one large baking dish with softened butter or cooking spray. Dust the insides generously with cornmeal and tap out any excess.
In a large mixing bowl, whisk together the warm cooked grits, grated Cheddar cheese, egg yolks, salt, and fresh chives until well combined and smooth. Let the mixture cool slightly to room temperature.
In a separate, clean, dry bowl, whip the egg whites using an electric mixer on high speed until stiff peaks form. This usually takes 3–5 minutes. Do not overbeat or the whites will become grainy.
Fold one-third of the whipped egg whites into the grits mixture using a rubber spatula, cutting down the center and folding gently until nearly combined. Add the remaining egg whites in two additions, folding gently each time until just combined. Do not overmix—some streaks of white are acceptable and help maintain the soufflé's rise.
Divide the soufflé mixture evenly among the prepared ramekins or pour into the large baking dish. Smooth the tops lightly with the spatula.
Place the soufflé on the center rack of the preheated oven and bake for 40–50 minutes, until the top is golden brown, the soufflé has risen well above the rim, and the center reaches 160°F on an instant-read thermometer when tested near the center.
Remove the soufflé from the oven and serve immediately, as it will begin to deflate after a few minutes. Serve with any desired accompaniment.
