Ingredients

1/2 large cucumber, shredded

2 medium tomatoes, pureed

2 small garlic cloves, minced

1 1/2 cups Greek yogurt

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

2 tablespoons olive oil, divided

2 teaspoons fresh dill

1/2 teaspoon salt

1/4 teaspoon black pepper

Directions

  1. In a large bowl, combine the Greek yogurt with the minced garlic, shredded cucumber, pureed tomatoes, fresh lemon juice, 1 tablespoon of olive oil, dill, lemon zest, salt, and black pepper. Stir well until all ingredients are fully incorporated and the mixture is smooth.

  2. Taste and adjust seasonings as needed. If you prefer a thinner consistency, add additional olive oil one teaspoon at a time until you reach your desired texture.

  3. Serve the gazpacho immediately at room temperature, or cover and refrigerate until chilled and ready to serve.

  4. Just before serving, drizzle each bowl with a light amount of olive oil as garnish.
