Ingredients
3 cup Fresh baby spinach, chopped
1½ cup Broccoli florets, diced
125 g Diced ham
12 large Large egg whites
1 tsp Dried basil
¼ tsp Black pepper
2 tsp Nonstick cooking spray
Directions
Preheat the oven to 325°F. Lightly coat a 9-inch square baking pan with nonstick cooking spray and set aside.
Lightly spray a large skillet with nonstick cooking spray and place over medium heat. Add the diced broccoli and cook for 3-4 minutes, stirring frequently, until the florets are bright green and tender-crisp.
Reduce the heat to medium-low. Add the chopped spinach to the skillet and cook, stirring constantly, until the spinach is completely wilted, about 2-3 minutes. Remove from heat.
In a large bowl, whisk together the egg whites, dried basil, and black pepper until the mixture is light and frothy, about 1-2 minutes.
Fold the cooked broccoli, spinach, and diced ham into the egg white mixture, stirring gently until all ingredients are evenly distributed.
Pour the mixture into the prepared baking pan, spreading it evenly. Bake at 325°F for 25-30 minutes, until the center is set and no longer jiggles when gently shaken.
Remove from the oven and allow the quiche to cool for at least 5 minutes. Cut into four 4-inch squares, then slice each square diagonally to create 8 triangular servings.
Comments
This is a weeknight-friendly quiche with ingredients that live at every Charlotte chain, and at $1.50–$2.00 per serving it's genuinely budget-conscious. The 45-minute stated time is honest if you're using pre-cut broccoli and spinach, though fresh spinach wilts faster than frozen and changes the texture; ham and eggs are rock-solid grocery staples. The real caveat is that egg-white-only quiches can dry out by day two, so plan to eat most of it fresh or reheat gently in a low oven rather than the microwave.
