Ingredients

1 tbsp vegetable oil

1 medium medium onion, diced

2 clove garlic cloves, minced

1 tsp fresh ginger, minced and peeled

1 lb lean ground beef

1 tbsp curry powder

1 tsp garam masala spice blend

½ tsp salt

1 small small yellow summer squash, diced

1 cup chicken broth

1 cup frozen peas

½ cup fresh cilantro leaves, loosely packed

1 cup plain couscous

½ cup golden raisins

Directions

  1. Heat the vegetable oil in a large skillet over medium-high heat. Once shimmering, add the diced onion and cook, stirring occasionally, until it begins to soften, about 2 minutes.

  2. Add the minced garlic and ginger to the skillet and stir constantly for about 30 seconds until fragrant.

  3. Add the lean ground beef and cook, breaking it apart with a spoon or spatula as it browns. Continue cooking until the beef is no longer pink, about 5 to 7 minutes. Drain excess fat if needed.

  4. Sprinkle the curry powder, garam masala, and salt over the beef mixture. Stir well to coat all the ingredients evenly.

  5. Add the diced yellow summer squash to the skillet and stir to combine. Cook for about 2 minutes.

  6. Pour in the chicken broth and bring to a simmer. Add the frozen peas, stir, and let the mixture simmer for about 3 to 4 minutes until the peas are heated through and the squash is tender.

  7. Remove the skillet from the heat and stir in the fresh cilantro leaves.

  8. While the beef mixture is cooking, prepare the couscous. In a separate pot, bring 2 cups of water or additional chicken broth to a boil. Stir in the couscous and golden raisins, then remove from heat. Cover and let stand for 5 minutes, then fluff with a fork.

  9. Divide the couscous among four serving bowls or plates and top with the spicy beef mixture.
