Ingredients
1 pound medium-firm tofu
3 tablespoons red or white miso
1 tablespoon mirin
1 teaspoon fresh ginger juice
Directions
Remove the tofu from its packaging and drain any excess liquid. Pat the tofu dry with clean kitchen towels or paper towels, pressing gently to remove surface moisture without breaking the block.
Cut the tofu into slices approximately ½ inch thick. Arrange the slices on a clean kitchen towel and let them rest for 5 minutes to allow additional moisture to be absorbed.
In a small bowl, combine the miso, mirin, and fresh ginger juice. Stir well until the mixture forms a smooth, uniform paste with no lumps.
Select a clean glass jar or ceramic container. Spread a thin layer of the miso mixture on the bottom of the container.
Place one layer of dried tofu slices on top of the miso base, then spread a thin layer of the miso mixture over the tofu. Repeat, alternating layers of tofu and miso marinade, until all tofu slices and marinade are used, ending with a thin layer of miso on top.
Cover the container loosely with plastic wrap or a loose-fitting lid to allow air circulation while protecting from dust and contamination.
Place the container in a cool, dark corner of your pantry or in the refrigerator. The tofu will begin marinating immediately and will develop deeper flavor over 2 to 4 days of resting.
After 2 days minimum (preferably 3 to 4 days), the tofu is ready to serve. Remove slices from the miso marinade as needed, wiping away excess miso with a damp cloth or knife. Serve chilled or at room temperature as an appetizer, side dish, or part of a rice bowl.
