Ingredients

4 cups chopped romaine lettuce

1/4 cup diced red onion

1 cup canned low-sodium black beans, drained and rinsed

1 orange, peeled and diced

1 tomato, diced

1 tablespoon olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Black pepper to taste

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning food preparation.

  2. In a large salad bowl, combine the chopped romaine lettuce, diced red onion, drained and rinsed black beans, diced orange, and diced tomato.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano until well combined. Season the dressing with black pepper to taste.
