The zucchini is charred on a hot grill for a smoky depth, then layered with cool mozzarella and finished with a drizzle of tangy balsamic glaze. Ingredients

1 zucchini, sliced lengthwise into ¼-inch planks

2 tablespoons olive oil, divided

Salt and black pepper to taste

4 cracked wheat Kaiser rolls

8 ounces fresh mozzarella cheese, sliced

1 large ripe tomato, sliced

½ cup Fresh basil leaves, approximately ½ cup packed

2 tablespoons balsamic glaze

Directions

  1. Preheat a grill or grill pan to medium-high heat. Pat the zucchini slices dry with paper towels. Brush both sides of the zucchini slices lightly with 1 tablespoon of olive oil and season generously with salt and pepper.

  2. Place the zucchini slices on the hot grill or grill pan and cook for 2-3 minutes per side until golden char marks appear and the zucchini is tender but still holds its shape. Transfer to a plate.

  3. Lightly brush or drizzle the cut sides of each Kaiser roll with the remaining olive oil and toast on the grill for 1-2 minutes until lightly golden, if desired.

  4. Layer each roll with grilled zucchini slices, followed by 2 ounces of fresh mozzarella slices, one or two tomato slices, and a small handful of fresh basil leaves. Season the tomato and mozzarella layers lightly with salt and pepper.

  5. Drizzle the balsamic glaze over the filled sandwiches to taste. Close the rolls gently and serve immediately while the zucchini is still warm.
