2 tablespoons Asian fish sauce

2 tablespoons sugar

1 whole Juice of 1 lime

2 pounds green papaya, peeled, seeded, and finely shredded

1 cup cherry tomatoes, halved

¼ cup fresh cilantro leaves

Directions

  1. In a small bowl, combine the finely chopped red Thai chile, fish sauce, sugar, and fresh lime juice. Stir until the sugar is completely dissolved, creating a balanced dressing with spicy, salty, sweet, and tart notes.
