Ingredients
2 medium squash, cut into ¼-inch sticks
¼ teaspoon garlic powder
¼ teaspoon ground cumin
½ lime, juiced
pinch pinch of salt
pinch pinch of black pepper
¼ cup fresh cilantro, chopped
Directions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
Arrange the squash fries in a single layer on the prepared baking sheet.
In a small bowl, whisk together the garlic powder, ground cumin, salt, and black pepper.
Drizzle the lime juice evenly over the squash fries, then sprinkle the spice mixture over top, tossing gently to coat.
Bake for 15 minutes until the squash begins to soften.
Switch the oven to broil on high and broil for 4–5 minutes, watching carefully, until the edges are lightly browned and crispy.
Remove from the oven and top with fresh cilantro. Serve immediately.
Comments
Every ingredient is a standard carry at any Charlotte grocer—squash year-round, fresh cilantro and limes at all the chains mentioned, garlic powder and cumin in every spice aisle. At roughly $1.50 for squash, 50 cents for cilantro and lime, and pocket change for seasonings, you're looking at under $1 per serving, making this genuinely cheap. The stated 25 minutes is honest if you count oven time, though hands-on prep runs closer to 10 minutes; this is a true weeknight side that reheats reasonably well in a 350-degree oven. The only minor friction is that cilantro is perishable and will wilt by mid-week, so this works best early in your shopping cycle.
