Ingredients

6 to 8 boneless, skinless chicken breasts

1/2 cup Dijon mustard

1/4 cup balsamic vinegar

1/4 cup fresh lemon juice

1 tablespoon dried Italian herbs (such as Italian seasoning, Herbs de Provence, rosemary, or thyme)

1 cup extra-virgin olive oil

Directions

  1. In a small bowl, whisk together the Dijon mustard, balsamic vinegar, lemon juice, and dried herbs until well combined. Slowly drizzle in the olive oil while whisking continuously to create a smooth emulsion.

  2. Pat the chicken breasts dry with paper towels. Place them in a large shallow dish or resealable bag.

  3. Pour the mustard marinade over the chicken breasts, ensuring they are well coated on all sides. Cover the dish or seal the bag and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

  4. Remove the chicken from the refrigerator 10 minutes before cooking to allow it to come closer to room temperature.

  5. Heat a large skillet over medium-high heat. Remove the chicken breasts from the marinade, allowing excess to drip back into the dish. Reserve the remaining marinade.

  6. Place the chicken breasts in the hot skillet in a single layer and sear for 6 to 7 minutes on the first side without moving them, until golden brown.

  7. Flip the chicken breasts carefully and cook for another 5 to 6 minutes on the second side, until a meat thermometer inserted into the thickest part reads 165°F internal temperature.

  8. Pour the reserved marinade into the skillet around the chicken and simmer for 1 to 2 minutes, tilting the pan occasionally to coat the chicken with the pan sauce.

  9. Transfer the chicken breasts to a serving platter and spoon the pan sauce over the top. Serve warm with your choice of sides.
