Ingredients

1 lb Salt cod

2 lb Baby potatoes (red, gold, or a mix)

3 Green onions, thinly sliced

2 slices Bacon, fried until crispy

Olive oil

Black pepper, to taste

Directions

  1. Rinse the salt cod under cool running water, rubbing gently until the pieces begin to separate and excess salt is removed.

  2. Place the separated cod pieces in a pot and cover with water. Heat gently over medium heat until small bubbles begin to break the surface, then turn off the heat.

  3. Drain the cod and rinse it thoroughly with cool water to remove any remaining salt.

  4. Return the rinsed cod to the pot and cover completely with fresh water. Let it soak overnight in the refrigerator to remove any remaining saltiness.

  5. Place the baby potatoes in a separate pot of salted water and bring to a boil. Cook for 12–15 minutes until the potatoes are tender when pierced with a fork, then drain.

  6. Drain the soaked cod and break it into flaky pieces, discarding any skin or bones.

  7. Combine the warm potatoes and flaked cod in a large bowl.

  8. Cook the bacon slices until crispy, then chop or crumble them.

  9. Add the chopped bacon and sliced green onions to the potato and cod mixture.

  10. Drizzle generously with olive oil and season with black pepper to taste. Toss gently to combine, then serve while still warm.
