1 tablespoon extra-virgin olive oil
1 medium onion, chopped
1 pound lean ground beef
2 15-ounce cans no-salt-added navy beans, rinsed
1 cup water
¾ cup ketchup
¼ cup molasses
1 teaspoon Dijon mustard
½ teaspoon garlic powder
¼ teaspoon salt
¼ cup chopped fresh chives for garnish
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 2–3 minutes, stirring occasionally, until softened and fragrant.
Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Continue cooking for 5–7 minutes, stirring occasionally, until the meat is browned and cooked through (internal temperature reaches 160°F). Drain any excess fat if needed.
Stir in the rinsed navy beans, water, ketchup, molasses, Dijon mustard, garlic powder, and salt. Mix well to combine all ingredients.
Bring the mixture to a simmer over medium heat and cook, uncovered, for about 10 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld.
Transfer to a serving dish and garnish with fresh chopped chives. Serve hot.
