3 cups watermelon, cut into 1-inch cubes

3 cups honeydew melon, cut into 1-inch cubes

Directions

  1. Wash your hands thoroughly with soap and water before beginning.

  2. In a small food processor or blender, combine the lime juice, fresh mint leaves, and brown sugar. Pulse until the mixture becomes a smooth, syrupy dressing with finely minced mint throughout.

  3. Add the watermelon and honeydew cubes to a large serving bowl.

  4. Pour the mint-lime dressing over the melon cubes and gently toss until all pieces are evenly coated. Serve immediately or chill until ready to eat.

This salad hits all the marks for a Charlotte summer: melons are at peak availability and price June through August at every major chain, lime and mint are staples, and you're genuinely done in 15 minutes of chopping. The cost per serving lands around 70 cents, driven entirely by the melons, which are a bargain in season. It reheats poorly (the texture suffers), so plan it for same-night service, and while it feeds eight, it's a side dish, not a meal. The only friction is that this only makes sense May through September; outside those months you're paying $4 for a pale melon and the dish loses its point.
