Ingredients

6 tablespoons unsweetened coconut milk

3 tablespoons fresh lime juice

5 teaspoons fish sauce

1 tablespoon shallot, finely grated

1 tablespoon light brown sugar

¼ cup vegetable oil

Directions

  1. In a small bowl, whisk together the coconut milk, lime juice, fish sauce, grated shallot, and brown sugar until the mixture becomes smooth and the sugar has dissolved.

  2. While continuing to whisk constantly, add the vegetable oil in a slow, steady stream to create an emulsified dressing. Continue whisking until the oil is fully incorporated and the dressing is creamy and well combined.

  3. Use immediately, or cover and refrigerate for up to 1 day before serving. Whisk again briefly before using if the dressing has separated.
