Ingredients
2½ lb. boneless pork loin
1½ tsp. ground cumin
1 package mixed dried fruit
Directions
Preheat your oven to 375°F (190°C). Pat the pork loin dry with paper towels to ensure even browning.
Rub the entire surface of the pork loin generously with ground cumin, pressing gently so it adheres well to the meat.
Scatter the mixed dried fruit across the bottom of a roasting pan. Place the cumin-rubbed pork loin on top of the fruit.
Roast in the preheated oven for 50–60 minutes, until the internal temperature of the pork reaches 145°F (63°C) when measured at the thickest part with a meat thermometer.
Remove from the oven and let the pork rest for 5 minutes before slicing. The dried fruit at the bottom will have softened and caramelized, creating a natural pan sauce.
Slice the pork loin and serve with the roasted dried fruit spooned over or alongside each portion.
