Ingredients

1/4 cup toasted black sesame seeds or 3 tablespoons black sesame seed paste

1/3 cup honey

1 1/2 cups whole milk

2 1/4 teaspoons powdered gelatin

1 1/2 cups heavy cream

Directions

  1. If using whole black sesame seeds, grind them finely in a food processor or blender until they release their oils and form a paste-like consistency. If using sesame seed paste, proceed to the next step.

  2. Warm 1/2 cup of the milk in a small saucepan over low heat until small bubbles form at the edges, approximately 2 minutes.

  3. Sprinkle the gelatin over the remaining 1 cup of cold milk and let sit for 2 minutes to bloom.

  4. Pour the warmed milk into the gelatin mixture and stir gently for about 1 minute until the gelatin is completely dissolved.

  5. Add the black sesame paste (or ground seeds) and honey to the warm milk mixture. Whisk thoroughly until well combined and smooth, about 2 minutes.

  6. Allow the mixture to cool to room temperature, stirring occasionally, approximately 10-15 minutes.

  7. In a separate bowl, whip the heavy cream until soft peaks form.

  8. Gently fold the whipped cream into the cooled black sesame mixture in two additions until no streaks of white remain.

  9. Divide the pudding mixture evenly among 6 serving glasses or bowls.

  10. Refrigerate for at least 3 hours, or until the puddings are set and chilled. Serve cold.
