Ingredients
12 oz cavatappi pasta
1/4 cup butter
1 lb large shrimp, peeled and deveined with tails on
1/4 cup fresh chopped chives
1 large lemon, sliced
Salt and black pepper to taste
Directions
Bring a large pot of salted water to a rolling boil. Add cavatappi and cook following the package directions until just tender. Drain the pasta, saving 1/2 cup of the cooking water, and set the pasta aside in the pot.
While the pasta cooks, heat butter in a large skillet over medium heat. Squeeze the lemon juice into the pan, then stir in the fresh chives. Season lightly with salt and pepper, then bring the mixture to a gentle simmer.
Add the shrimp to the simmering butter sauce and cook for approximately 2 minutes on each side, until the shrimp turn pink and reach an internal temperature of 145F. Do not overcook.
Transfer the cooked cavatappi to the skillet with the shrimp. Toss gently to combine, adding a splash of the reserved pasta water if needed to create a light, silky sauce. Arrange the lemon slices on top and serve immediately.
