2 tablespoons crumbled blue cheese

3 tablespoons fat-free cream cheese

½ cup fat-free plain yogurt

4 dried apricots

4 dried figs

¼ cup pecans, chopped

8 celery stalks

Directions

  1. Finely chop the dried apricots and figs into small, bite-sized pieces. Coarsely chop the pecans and set aside.

  2. In a medium bowl, combine the crumbled blue cheese, cream cheese, and plain yogurt. Using a fork or hand mixer, blend the mixture until smooth and uniform, breaking up any lumps of cheese.

  3. Fold the chopped apricots, figs, and pecans into the cheese mixture, stirring until evenly distributed throughout.

  4. Transfer the spread to a covered container and refrigerate for at least 30 minutes before serving, allowing the flavors to meld.

  5. Wash and trim the celery stalks. Cut each stalk into 3 to 4 inch segments.

  6. Spoon or pipe the apricot-blue cheese spread generously into the hollow center of each celery stick. Arrange on a serving platter and serve chilled.
