Quick Chili with Sweet Potato and Pork

Ingredients
1 tablespoon olive oil
1 pound ground pork
1 medium onion, chopped
2 medium garlic cloves, minced
2 chipotles en adobo, chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1 (15-ounce) can fire-roasted whole peeled tomatoes
12 ounces beer
2 cups low-sodium chicken broth
1 pound sweet potatoes, peeled and cut into 1-inch cubes
1 (15-ounce) can pinto beans, drained
1 (15-ounce) can chickpeas, drained
Kosher salt to taste
4 scallions, green parts thinly sliced
Sour cream for serving
Directions
Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the ground pork and cook, breaking it into small pieces with a spoon, until no pink remains and it is cooked through (internal temperature of 165°F), about 5–7 minutes. Drain excess fat if needed.
Add the chopped onion to the pot and sauté for about 2–3 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the chopped chipotles en adobo, chili powder, and ground cumin to the pot, stirring well to coat the pork mixture. Cook for about 1 minute to bloom the spices.
Pour in the beer and use a spoon to scrape up any browned bits from the bottom of the pot. Stir in the fire-roasted tomatoes with their juices, breaking them apart with the spoon as you add them.
Add the chicken broth and bring the mixture to a simmer. Stir in the cubed sweet potatoes, pinto beans, and chickpeas.
Reduce heat to medium and simmer uncovered for 25–30 minutes, stirring occasionally, until the sweet potatoes are tender and the flavors have melded. Season with kosher salt to taste.
Ladle the chili into bowls and top each serving with a sprinkle of sliced scallion greens and a dollop of sour cream. Serve immediately.
