Ingredients

2⅓ cup Gluten-free 1-to-1 baking flour

⅔ cup Quinoa flour

1 tsp Baking powder

1 tsp Sea salt

1.17 cup Warm water

⅓ cup Olive oil

1 lb Ground turkey

2 tbsp Olive oil for cooking

2 medium Fresh jalapeños, seeded and chopped

1 small Small red onion, diced

1 clove Garlic clove, minced

1 medium Diced tomato

2 tbsp Tomato paste

1 tsp Chili powder

2 tsp Cumin

1 tsp Paprika

¼ tsp Cayenne pepper

Salt and black pepper to taste

Grilled corn for topping

Shredded cheese for topping

Guacamole for topping

Red salsa for topping

Fresh lettuce for topping

Directions

  1. In a large mixing bowl, whisk together the gluten-free baking flour, quinoa flour, baking powder, and sea salt.

  2. Pour the warm water into a measuring cup and stir in the olive oil until combined.

  3. Slowly add the liquid mixture to the dry ingredients, stirring with a wooden spoon or mixing by hand until the dough comes together. Add more water 1–2 tablespoons at a time if the dough feels too dry, kneading well after each addition. The dough should be moist and easy to form into a ball.

  4. Heat 2 tablespoons of olive oil in a large skillet over medium heat.

  5. Add the ground turkey to the hot oil and cook for about 5 minutes, breaking it up with a wooden spoon as it cooks until it is nearly done. Transfer the cooked turkey to a plate.

  6. Return the skillet to medium heat and add the chopped jalapeños, diced red onion, and minced garlic. Sauté for 2–3 minutes until the garlic becomes fragrant and the vegetables soften.

  7. Return the turkey to the skillet and add the diced tomato, tomato paste, chili powder, cumin, paprika, and cayenne pepper. Stir well to combine all ingredients.

  8. Simmer the turkey mixture over medium heat for 5–10 minutes, stirring occasionally, until the turkey is fully cooked and the filling is flavorful and juicy. Season with additional salt and pepper to taste.

  9. While the filling simmers, take a piece of dough slightly larger than a golf ball and roll it between your hands into a smooth ball.

  10. Using a cast iron tortilla press, place the dough ball inside and press down until the tortilla reaches the thickness of a traditional tortilla.

  11. Heat a dry cast iron skillet over medium heat. Cook each tortilla for 2–3 minutes per side until lightly spotted and cooked through. Transfer to a plate and keep warm.

  12. Repeat steps 9–11 with the remaining dough until all tortillas are cooked.

  13. To serve, place a scoop of the spiced turkey filling into each warm tortilla and top with grilled corn, shredded cheese, guacamole, salsa, fresh lettuce, or your favorite toppings. Enjoy your homemade gluten-free tacos!

The gluten-free flour blend—baking flour plus quinoa flour—requires a dedicated stop at Harris Teeter or Kroger; neither ALDI nor Walmart reliably stocks both together, and Food Lion's gluten-free section is spotty. Ground turkey costs roughly $0.50 to $0.75 more per pound than ground beef at Charlotte chains, and the homemade tortillas add labor that the recipe likely underestimates (mixing, resting, rolling, cooking will push thirty minutes for the dough alone). The filling itself is straightforward and reheats well, the spices and corn are standard, and a family of four can eat cheaply once the flours are bought. This works best if you already buy gluten-free or have a reason to: a true weeknight shortcut it is not.
