Ingredients

2 tablespoons Unsalted butter

2 tablespoons All-purpose flour

1 Celery stalk, diced

1 Onion, diced

1 small Small green bell pepper, diced

3 cloves Garlic cloves, minced

¾ cup Chicken stock or reduced-fat low-sodium chicken broth

1 tablespoon Tomato paste

1 pound Shelled crawfish tails

2 tablespoons Fresh parsley, chopped

¼ teaspoon Cayenne pepper

Coarse salt

Freshly ground black pepper

Cooked rice, for serving

2 Scallions, white and pale green parts, chopped

Directions

  1. Melt the butter in a large skillet over medium-high heat. Sprinkle the flour over the melted butter and whisk constantly while cooking until the roux turns a light golden-brown color, approximately 10 minutes. Watch carefully to prevent burning.

  2. Add the diced celery, onion, and bell pepper to the roux. Stir well and cook over medium-high heat until the onions become translucent and softened, about 3 to 5 minutes.

  3. Stir in the minced garlic and cook for 45 to 60 seconds until the garlic becomes fragrant, being careful not to let it burn.

  4. In a small bowl, whisk together the chicken stock and tomato paste until well combined. Pour this mixture into the skillet with the vegetables, stirring constantly. Increase heat to bring the sauce to a boil.

  5. Once boiling, reduce the heat to medium and simmer the sauce for approximately 10 minutes, stirring occasionally, until it thickens slightly and the flavors blend together.

  6. Add the crawfish tails, fresh parsley, and cayenne pepper to the sauce. Stir gently to combine and cook for about 5 minutes until the crawfish is heated through completely. The crawfish is delicate and should not be overcooked.

  7. Taste the etouffée and adjust seasoning with coarse salt and freshly ground black pepper as needed. Serve the hot etouffée over fluffy cooked rice and garnish with chopped scallions. Serve immediately while hot.
