Ingredients

250g couscous

300g frozen broad beans

125g baby spinach leaves

20g fresh mint

85g black olives

200g feta cheese

Olive oil for drizzling

Salt and black pepper to taste

Directions

  1. Bring a kettle of water to a boil. Place the couscous in a bowl and pour the boiling water over it according to the package instructions, stirring gently. Cover and let it sit until fluffy and the liquid is fully absorbed, about 5 minutes.

  2. While the couscous rests, bring a separate pot of water to a boil and add the frozen broad beans. Cook according to the package instructions, typically 4–5 minutes. Drain in a colander and immediately rinse under cold running water until cooled completely; set aside.

  3. Place the baby spinach in a colander. Carefully pour boiling water over the spinach leaves to gently wilt them. Immediately refresh under cold running water and squeeze gently with your hands to remove excess moisture. Set aside.

  4. Transfer the cooked couscous to a large bowl. Add the cooled broad beans, wilted spinach, fresh mint leaves, and black olives. Toss gently to combine.

  5. Crumble the feta cheese over the salad with your fingers. Drizzle generously with olive oil and season with salt and black pepper to your taste. Toss everything together until well combined, then serve.
