3 ripe bananas

1/3 cup margarine (or butter)

2 cups quick-cooking oats, uncooked

1/4 cup fat-free or low-fat milk

1/2 cup raisins

1 teaspoon vanilla extract

Directions

  1. Begin by washing your hands thoroughly with soap and warm water.

  2. Preheat your oven to 350°F.

  3. Place the margarine in a small saucepan and melt it over low heat, stirring occasionally until completely melted. Remove from heat and let cool slightly.

  4. Peel the ripe bananas and place them in a large mixing bowl. Mash them with a fork until smooth with just a few small lumps remaining.

  5. Add the melted margarine, quick-cooking oats, milk, raisins, and vanilla extract to the bowl with the mashed bananas.

  6. Mix all ingredients together thoroughly with a spoon until well combined and the oats are evenly distributed.

  7. Allow the mixture to rest for about 5 minutes so the oats can fully absorb the moisture and the dough becomes easier to handle.

  8. Lightly grease a large baking sheet with cooking spray or a light coating of oil.

  9. Using a spoon or cookie scoop, drop rounded tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

  10. Bake the cookies in the preheated oven for 15 to 20 minutes, until the edges are light golden brown and the tops feel set but still soft.

  11. Remove the baking sheet from the oven and allow the cookies to cool on the sheet for about 1 minute.
