Ingredients

2 medium ripe plantains, peeled

1 small small apple, peeled, cored, and grated

½ tsp ground cinnamon

3 tbsp coconut oil, for cooking

Directions

  1. Peel the plantains and break them into chunks. Using a fork or potato masher, gently mash the plantains in a medium bowl, leaving some small lumps for better texture. Avoid overmashing.

  2. Add the grated apple and ground cinnamon to the mashed plantains. Stir everything together until well combined.

  3. Heat 1 to 2 tablespoons of coconut oil in a large skillet over medium heat. Once shimmering, carefully drop heaping spoonfuls of the plantain mixture into the pan and gently flatten each portion with the back of a spoon to about 2 to 3 inches in diameter. Cook in batches if needed to avoid crowding.

  4. Cook the fritters for 10 to 12 minutes until the bottoms are deep golden brown. If the fritters are browning too quickly, lower the heat slightly. Add a little more coconut oil if the fritters absorb it and the pan becomes dry.

  5. Carefully flip each fritter and cook on the second side for 7 to 8 minutes until golden brown and cooked through. Add more coconut oil as needed if the fritters are absorbing it. Transfer the finished fritters to a plate and serve warm.

Plantains are widely stocked at Harris Teeter, Food Lion, Publix, and Walmart in Charlotte, and apples, cinnamon, and coconut oil are pantry staples everywhere. The 30-minute stated time is honest for mixing and frying, and the cost per serving lands under $1 because plantains and apples are inexpensive. This is a straightforward weeknight fritter with no fussy technique, though it does ask you to monitor the oil temperature and fry in batches. A real caveat: fritters are best eaten hot the same night and do not reheat well, so this suits a family dinner with everyone at the table together rather than a make-ahead meal.
