Ingredients

1 tbsp Canola oil

2 large Boneless pork chops, 1/2 inch thick

Kosher salt

Black pepper

8 whole Scallions, white and green parts separated

2 inch Fresh ginger, peeled and sliced

6 cup Low-sodium chicken broth

1 tbsp White wine or mirin

6 oz Ramen noodles (seasoning packets discarded)

1 tbsp Soy sauce

2 tsp Rice wine vinegar

1 large Large carrot, grated

2 whole Radishes, halved and thinly sliced

½ cup Fresh cilantro leaves

Directions

  1. Season both pork chops generously on both sides with kosher salt and black pepper. Heat the canola oil in a large skillet over medium-high heat. Once the oil shimmers, add the pork chops and sear for 4-5 minutes per side until they reach an internal temperature of 165°F. Transfer the cooked pork to a cutting board and set aside.

  2. In the same skillet, add the sliced ginger and the white parts of the scallions. Sauté for about 1 minute until fragrant.

  3. Pour in the chicken broth and white wine or mirin, stirring to combine. Bring the mixture to a boil, then reduce heat to a simmer.

  4. Add the ramen noodles directly to the simmering broth and cook according to package directions (typically 3-4 minutes) until tender.

  5. While the noodles cook, slice the seared pork chops into bite-sized pieces.

  6. Stir the soy sauce and rice wine vinegar into the broth. Add the sliced pork, grated carrot, and sliced radishes to the soup and simmer for 1-2 minutes.

  7. Taste and adjust seasonings if needed. Divide the soup among four bowls and garnish each with the green parts of the scallions and fresh cilantro leaves.

This pork ramen works well for a weeknight with ingredients that are straightforward to find at any Charlotte chain: pork chops, standard pantry staples, and vegetables from the produce section. The stated 45 minutes is honest for the actual cooking, though you'll want to add ten minutes for prepping ginger, scallions, and radishes. At roughly $3.50 to $4.00 per serving, it's a solid value; pork chops are the cost anchor, and they're usually on promotion at Harris Teeter or Food Lion. The one caveat is that this is best eaten fresh the same night—the noodles absorb broth and the radishes soften on standing, so leftovers lose their snap and texture appeal.
