Ingredients

2 pork tenderloins

2 tablespoons extra-virgin olive oil

Salt to taste

Black pepper to taste

1 jar (8 ounces) sweet balsamic mustard

Directions

  1. Preheat your oven to 400°F.

  2. Generously season both pork tenderloins with salt and black pepper on all sides.

  3. Heat the extra-virgin olive oil in a large skillet over medium-high heat until shimmering.

  4. Carefully place one pork tenderloin into the hot oil and sear for 3-4 minutes per side until deeply browned. Transfer the seared tenderloin to a baking dish.

  5. Repeat the searing process with the second pork tenderloin, adding it to the baking dish alongside the first.

  6. Brush the top and sides of both tenderloins with half of the sweet balsamic mustard until evenly coated.

  7. Place the baking dish in the preheated oven and roast for approximately 25 minutes, or until the internal temperature of the thickest part of each tenderloin reaches 145°F.

  8. Remove the pork from the oven and transfer the tenderloins to a clean cutting board. Allow them to rest for 5 minutes.

  9. Brush the rested tenderloins with the remaining sweet balsamic mustard, coating evenly.

  10. Slice the pork into ½-inch thick pieces and serve warm with fresh salad on the side.
