Ingredients
5 cups tart apples, peeled, cored, and chopped
1 cup granulated sugar
1 cup raisins
1/2 cup pecans, chopped
1/4 cup vegetable oil
2 teaspoons vanilla extract
1 large egg, beaten
2 1/2 cups all-purpose flour, sifted
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
Directions
Wash your hands thoroughly with soap and warm water.
Preheat your oven to 350°F (175°C). Lightly oil a 13x9x2 inch baking pan and set aside.
In a large mixing bowl, combine the chopped tart apples, sugar, raisins, and pecans. Stir until well blended.
Allow the apple mixture to stand at room temperature for 30 minutes to let the flavors meld and the apples release their juices.
After resting, stir the vegetable oil, vanilla extract, and beaten egg into the apple mixture until fully incorporated.
In a separate bowl, sift together the all-purpose flour, baking soda, and ground cinnamon. Add this dry ingredient mixture to the apple mixture in three parts, gently folding after each addition just until the dry ingredients are moistened. Do not overmix.
Transfer the batter into the prepared baking pan, spreading it evenly.
Bake in the preheated oven for 35 to 40 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
Remove the cake from the oven and allow it to cool in the pan for 10 minutes before cutting and serving.
