Ingredients
2 pounds Ground beef (85% lean)
Kosher salt
Freshly cracked black pepper
4 Cheddar cheese slices
4 Hamburger buns
Directions
Divide the ground beef into four equal portions (approximately 8 ounces each). Gently shape each portion into a patty about 3/4 inch thick, being careful not to overwork the meat. Season both sides of each patty generously with kosher salt and freshly cracked black pepper.
Heat a skillet or griddle over medium-high heat until hot. Place the beef patties on the hot surface and cook for 3 to 4 minutes on the first side without moving them, allowing them to develop a brown crust.
Flip each patty carefully and cook for another 3 to 4 minutes on the second side, until the internal temperature reaches 160°F when measured with a meat thermometer.
In the final minute of cooking, place one slice of cheddar cheese on top of each patty. If desired, cover the skillet with a lid or tent with foil to help the cheese melt.
Toast the hamburger buns lightly in the skillet or oven until golden and slightly crisp.
Transfer each cheese-topped burger patty to a toasted bun and serve immediately.
