Ingredients

½ cup cashew pieces

1 large egg

3 tablespoons maple syrup

½ teaspoon sea salt

2 tablespoons tapioca flour

½ teaspoon vanilla extract

Directions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. Place cashew pieces in a food processor or blender and pulse until finely ground into a flour-like consistency.

  3. Add the egg, maple syrup, sea salt, tapioca flour, and vanilla extract to the processor. Pulse until the mixture comes together into a wet dough.

  4. Transfer the dough to the parchment-lined baking sheet. Cover with another sheet of parchment paper on top.

  5. Using a rolling pin, gently roll the dough to a thickness of about ¼ inch between the parchment sheets.

  6. Carefully remove the top parchment paper. Using a sharp knife, score the dough into small square pieces.

  7. Bake in the preheated oven for 15 minutes until the edges begin to brown and firm up.

  8. Remove from the oven and allow to cool on the baking sheet for 8–10 minutes. The squares will continue to crisp as they cool. Break along the scored lines and serve.
